  • Mini Frittatas with Spinach and Cheese
  • Ingredients (4 people)
  • Non-stick vegetable oil
  • 2 tbsp extra virgin oil
  • 1 lb spinach
  • 5 eggs
  •  1 cup of ricotta
  • 1/3 cup grated cheese
  • 1/3 cup Parmigiano Reggiano cheese
  • Salt
  • Ground pepper

Recipe:

Heat the oven at the temperature of 425. F

Take 4 baking dishes of small size 

Coat them with oil spray

Take a large pan. Pour Olive oil and heat for 2 to 5 minutes on medium flame.

Add spinach in it and cook for 4 to 7 minutes. Spinach will release water on cooking.

Drain this excess water in a colander.

Now, take eggs and whisk them well in a medium-sized bowl. Stir ricotta in it. 

Swiss Parmigiano Reggiano cheese, and cheese, salt, spinach mixture and pepper.

Ladle into baking dishes and bake about 25 minutes.
